摘　　要：本研究通过以牛线粒体保守基因序列设计的特异性引物和探针,建立了肉制品中牛源性成分Taqman荧光PCR检测方法,并对方法的特异性、灵敏度和稳定性进行了评价;通过模拟浓度标准曲线,完成了对牛源性成分的相对定量检测。结果显示,本方法具有特异性强、灵敏度高(检出限为0.001%)的特点,适用于肉制品中牛源性成分及含量的快速检测。According to the conserved sequence of the gene in bovine mitochondria,the specific primers and probes were designed,a real-time fluorescent PCR with TaqMan probe for detecting bovine-derived materials existing in meat products was developed. Then its specificity,sensitivity and stability were evaluated. Through the simulated concentration standard curve,the relative quantitative detection of bovine-derived materials was conducted. Results showed that this method had the characteristics of strong specificity and high sensitivity,by which the lowest detection limit was 0.001%. As a summary,the established method was suitable for rapid detection of bovine-derived materials and content in meat products.
