摘 要:运用方差分析、灰色关联度分析和回归分析等方法,分析了河南省8个烟区124份烟叶样品茄酮含量与化学成分及感官质量的关系,旨在为烤烟原料体系的构建和卷烟配方研制提供参考依据。结果表明:烟叶茄酮含量分布在42.58~70.88μg/g,平均值为53.09μg/g,变异系数为34.51%;以茄酮含量进行聚类分析将样品分为高、中、低茄酮3个类群,不同茄酮类群间总糖、还原糖、石油醚提取物和淀粉含量差异显著,总氮和氯含量差异不显著,其中总糖、还原糖和石油醚提取物含量表现为中茄酮类群>高茄酮类群>低茄酮类群,淀粉含量表现为高茄酮类群>中茄酮类群>低茄酮类群;感官质量指标中,透发性、香气质、甜度与茄酮含量关联度较高,余味与茄酮含量关联度最小;风格特征、香气特性、烟气特性总分及感官质量总分(y)与茄酮含量(x)均存在显著的回归关系,回归方程依次为y=-0.000 3x^2+0.440x-3.066、y=0.121x+17.771、y=0.024x+4.760及y=-0.020x^2+2.495x-17.903,口感特性总分与茄酮含量的回归方程未达到显著水平。The relationship between solanone content in flue-cured tobacco leaf and chemical constituent as well as sensory quality was studied with 124 samples of flue-cured tobacco leaf collected from 8 tobacco areas in Henan province using variance analysis,gray correlation analysis and regression analysis methods,so as to provide reference for construction of raw material system of flue-cured tobacco and cigarette formulation. The results indicated that the averaged content of solanone was 53. 09 μg / g,with the range of 42. 58—70. 88 μg / g,the coefficient of variation was 34. 51%. Through cluster analysis onsolanone content,the samples was divided into three groups,which were low,middle,high solanone content group. There was significant differences for total sugar,reduced sugar,petroleum ether extract and starch contents,but there were no significant differences for total nitrogen and chlorine contents among the three solanone content groups. Total sugar,reduced sugar,petroleum ether extract mainly presented as the middle solanone content group > the high solanone content group > the low solanone content group. The starch content presented as the high solanone content group > the middle solanone content group > the low solanone content group. The diffusiveness,aroma quality and sweetness of sensory evaluation index were closely related to solanone content,and there was a smallest correlation degree between solanone content and aftertaste. There were significant regression relationships between solanone content( x) and stylistic features score( y),aroma characteristics score( y),smoke characteristics score( y) as well as sensory evaluation total score( y). The corresponding regression equations were y =- 0. 000 3x2+ 0. 440x- 3. 066,y = 0. 121 x + 17. 771,y = 0. 024 x + 4. 760 and y =- 0. 020x2+ 2. 495x- 17. 903,respectively. The regression relationship between solanone content and taste characteristic score was not significant.
