摘 要:建立了快速测定青苹果中苹果酸的共振瑞利散射新方法。在弱碱性的Tris-HCl缓冲介质中,三苯甲烷染料灿烂绿与苹果酸反应生成绿色二元离子缔合物,使共振瑞利散射(RRS)显著增强并产生新的RRS光谱,最大共振瑞利散射峰位于340 nm处,苹果酸的质量浓度在(0.003-0.40)×10^-3g/L范围内与体系的共振瑞利散射增强程度ΔIRRS呈线性关系,定量限为0.0070 g/100 g。还探讨了适宜的反应条件及主要分析化学性质,方法用于青苹果中苹果酸的测定,结果满意。A new and fast resonance Rayleigh scattering method for quantifying malic acid in the green apple was developed. In an alkalescent Tris-Hydrochloric acid buffer, triphenylmethane dye brilliant green reacted with malic acid to form a green binary ionic association complex, which led to a distinctly enhanced resonance Rayleigh scattering (RRS) of system and the appearance of a new RRS spectrum. The maximum RRS peak was located at 340 nm. In this wavelength, the enhanced intensity (ΔIRRS) of RRS was directly proportional to the mass concentration of malic acid in the range of (0. 003 -0.40) × 10^-3 g/L with the limit of quantitation being 0. 0070 g/100 g. The optimum reaction conditions and the main properties of analysis were studied. The method was applied to determine the content of malic acid in the green apple with satisfactory results.
