摘　　要：以秸秆腐解剂处理小麦秸秆全量还田,进行不同施氮量处理,观察秸秆腐解剂对小麦秸秆的腐解效果,并分析不同施氮量对产量和品质的影响。结果表明:随施氮量的增加,产量呈先增加后降低的趋势;糙米率、精米率、整精米率与产量趋势一致。随施氮量的增加,垩白率增加,胶稠度下降,崩解值下降,消减值增加,稻米蒸煮食味品质变劣。秸秆还田施用腐解剂,在施氮量为300kg·hm-2水平下,整精米率最高,稻米的蒸煮食味品质最佳。Under wheat straw returning and treatment of decomposition accelerator,the decomposition effect of wheat straw was observed and rice yield and quality of Yangjing 805 under different nitrogen application rate were studied.The results indicated that with the increase of nitrogen application,the rice yield,brown rice rate,milled rice rate and head rice rate firstly increased and then decreased,the chalkiness rate and setback values increased while the gel consistency and breakdown value decreased constantly.Additionally,the rice cooking and eating quality deteriorated with the increase of nitrogen application.Reasonable application of nitrogen could improve rice quality,especially the cooking and eating quality.It could be concluded that the head rice rate was the highest,the processing quality and cooking and eating quality were the best under wheat straw returning and treatment of decomposition accelerator,together with nitrogen application of 300kg·hm-2.
