摘  要:为综合开发与利用野生银果胡颓子的果实,于2016年6月底对其果实的物理性状与营养成分进行分析测定。结果表明,银果胡颓子果实可食率为78.85%,糖酸比为4.92;Vc含量为8.12 mg·g^(-1),氨基酸总量达1.21%,含量最多的氨基酸为天冬氨酸(0.196%),其次是谷氨酸(0.125%)和组氨酸(0.111%);种子蛋白质含量为24.76%,远高于果肉中蛋白质的含量(1.40%);矿质元素以钾含量(2423.08 mg·kg^(-1))最高,其次为钙含量(380.56 mg·kg^(-1))。果实具有较高的食用价值和开发潜力。For the comprehensive development and utilization of wild plants Elaeagnus magna Rehd's fruit,at the end of June 2016,physical properties and nutrient content of fruit were analyzed. The rusults showed that the edible rate of fruit was 78. 85%; sugaracid ratio was 4. 92; Vc content was 8. 12 mg·g^-1; the total amino acid was 1. 21%,the most abundant amino acids for aspartic acid(0. 196%),followed by glutamic acid(0. 125%) and histidine(0. 111%); seed protein content was 24. 76%,much higher than protein content in the flesh(1. 40%); potassium mineral elements content was the highest(2423. 08 mg·kg^-1),followed by calcium(380. 56 mg·kg^-1). The fruit has high edible value and development potential.
