摘  要:以中国林蛙皮肤为实验原料,采用酶解法水解提取其胶原蛋白。考察了提取次数、料液比、提取时间、提取温度以及酶用量等因素对胶原蛋白提取效率的影响,确定中国林蛙皮肤胶原蛋白的提取条件为:胃蛋白酶提取,提取次数2次,料液比1∶60(g/mL),提取时间36 h,提取温度37℃,酶用量1∶100。还进一步考察了林蛙皮肤胶原蛋白的体外抗氧化能力。结果显示,林蛙皮胶原蛋白具有较强的羟基自由基清除能力,但实验范围内其超氧自由基和DPPH自由基清除能力较弱。The collagens from skin of Rana chensinensis were extracted using enzymatic extraction method. The effect factors which include extraction frequency, ratio of liquid to raw material, extraction time, ex- traction temperature, and amount of enzyme were studied, respectively. The extraction conditions were cho- sen as follows:enzyme is pepsin, extraction frequency is 2, water to raw material ratio is 60, extraction time is 36 h, extraction temperature is 37 ℃ and amount of enzyme is 1 : 100. In vitro antioxidant activities of the collagen from skin of Rana chensinensis were assayed. The results showed the collagen from skin of Rana chensinensis has strong scavenging ability of hydroxyl free radical, but the scavenging ability of su- peroxide anion free radical and DPPH free radical is weak.
