摘  要:研究从勃氏甜龙竹中提取新鲜竹汁,检测了其农残、矿物质元素、氨基酸的含量;并对新鲜竹汁进行过滤除菌,对比分析过滤前后竹汁中微生物的变化,研究其保质期。实验结果显示:勃氏甜龙竹农残未超标,矿物质元素和氨基酸含量丰富;从新鲜竹汁中分离得到36株菌株,均为细菌,主要属于Acinetobacter,Arthrobacter,Bacterium,Cedecea,Enterobacter,Pantoea,Pseudomonas,Sphingomonas和Stenotrophomonas 9个属;从过滤膜表面分离得到37株菌株,种类与新鲜竹汁中的主要微生物基本一致;过滤除菌后未检测出微生物;从过滤后变质的竹汁中分离得到21株菌株,属于Acinetobacter,Bacillus和Brevibacterium 3个属;过滤法能除去竹汁中的主要微生物,可以延长新鲜竹汁的保质期。Fresh bamboo juice was extracted from living Dendrocalamus brandisii (Munro) Kurz for analysis of pesticide residues,mineral elements,and amino acids.Microorganisms in the bamboo juice before and after filtration were compared to determine the shelf life.The experimental results showed that the pesticide content remained in the juice of Dendrocalamus brandisii (Munro) Kurz was standards-compliant,and the juice was rich in mineral elements and amino acids.36 bacterial strains were isolated from fresh bamboo juice,belonging to the genus of Acinetobacter,Arthrobacter,Bacterium,Cedecea,Enterobacter,Pantoea,Pseudomonas,Sphingomonas and Stenotrophomonas respectively.37 bacterial strains were isolated from the surface of filter membrane,essentially the same as those in fresh bamboo juice,no microorganisms were isolated after filtration.21 strains were isolated from metamorphic bamboo juice,belonging to the genus of Acinetobacter,Bacillus and Brevibacterium respectively.Filtration can remove the main microorganisms and extend the shelf life of fresh bamboo juice.
