摘 要:硒元素是促进植物生长的有益元素,也是人和动物必不可少的微量元素,以土壤—植物—人体食物链获取硒被认为是目前最有效的补硒途径。近年来,关于农产品中硒形态的研究已有诸多报道,但还未形成标准。本文从农产品中无机硒、有机硒及硒代氨基酸等硒形态的研究进展进行论述,以期为食品中硒形态的全面分析和食源性补硒产品的开发提供理论依据。Selenium is an essential element for plant growth and development and trace element for human beings and animals. It is considered to be the best way to acquire selenium through soil-plant-human food chain. In recent years, a large number of researches have been published on selenium speciaton in agricultural products, though the standard has not reached yet. The research progress of selenium speciaton in agricultural products were reviewed in this paper in terms of inorganic Selenium, organic selenium and selenoaminoacid, aiming at providing theoretical basis for the development of commercial selenium supplements derived from food.
