摘　　要：总结了我国近年来梨加工技术研究与产品开发情况,重点介绍了梨罐头、梨汁、梨发酵产品和鲜切梨的加工现状,分析了梨加工副产品的综合利用情况,并展望了我国梨加工产业未来的发展方向。This paper summarized research and product development of pear processing technology in recent years in China, focused on the processing of canned pear, pear juice, pear fermentation products and fresh-cut pear, analyzed the comprehensive utilization of by-products from pear processing, and prospected the development direction of pear processing industry in China.
