摘　　要：四川是我国肉兔养殖大省,兔肉蛋白含量高,营养价值丰富,同时兔产业发展可促进农村产业结构完善,而目前兔肉产业方面的相关文献较少。从兔肉产业形势进行概述,结合四川省兔肉消费情况,就目前兔肉加工现状和存在的问题提出了相关观点。Sichuan was a big province of meat rabbit culture in our country. The protein content of rabbit meat was high and nutrition value was rich. At the same time, the development of rabbit industrial could promote and perfect rural industrial structure. At present, related literatures of rabbit industrial were less. Rabbit meat industrial situation was summarized, Sichuan province rabbit meat consumption situation was combined, and related views of current rabbit meat processing status and existing problems were put forward.
