摘  要:通过对引进的美国七彩山鸡鸡苗家养至出栏时期进行屠宰,并与本地野生山鸡和土鸡作肉质性状分析。结果表明,本地土鸡除熟肉率外,其余指标均与其它2组有显著性差异(P<0.05),本地野生山鸡的胸腿肌含水率低于其它2组(P>0.05),腿肌的蛋白含量高于其它2组,熟肉率和粗灰分与美国七彩山鸡无显著差异(P>0.05);美国七彩山鸡的粗脂肪含量低于其它2组。胸肌的水分、粗蛋白质、粗脂肪及肌纤维直径与腿肌的指标差异显著(P<0.05)。本地野山鸡除锌含量较其它2组低外,其它3种元素含量均最高。Through the slaughter of imported American pheasant chicks to domestic market period.And with the analysis of meat quality traits of wild pheasant and chicken.The result shows,in addition to the local chicken cooked meat rate.The other indexes were significantly different from those of the other 2 groups (P〈0.05).The local wild pheasant chest and leg muscle moisture content is lower than the other 2 groups (P〉0.05).The protein content of leg muscle was higher than the other 2 groups.No significant difference in the rate of cooked meat and crude ash and American Pheasant (P〉0.05).The content of crude fat in American pheasant lower than the other 2 groups.The water content, crude protein, crude fat and muscle fiber diameter of the pecto- ral muscle were significantly different from those of the leg muscle.The local wild pheasant in zinc content than the other 2 groups of low.The other 3 ele- ments had the highest content.
