摘  要:为制定合理的肉鸭运输和屠宰前应激缓解策略,提高肉鸭肉品质,研究将120只42日龄北京鸭随机分成6组(组1~组6),对不同组别施以不同的运输时间、休息时间,并测定血液应激指标和肉品质。结果显示:组2、组3的T3、T4浓度要极显著低于组1(P<0.01),组6的谷丙转氨酶(ALT)、谷草转氨酸(AST)、肌酸激酶(CK)和谷胱甘肽过氧化物酶(GSH-Px)水平极显著低于组3、组5(P<0.01),组3、组5胸肌蛋白和丙二醛(MDA)含量极显著高于组1和组6(P<0.01),组3胸肌脂肪含量以及p H值都极显著高于组1(P<0.01),组2、组3胸肌蛋白质羰基含量极显著高于组1和组6(P<0.01)。结果表明,长途运输会给肉鸭带来很大应激,而宰前休息可以有效缓解应激,理想休息时间为2 h。To develop suitable relieving strategy for transport and pre-slaughter stresses in meat ducks, 120 Peking ducks at 42 days of age were randomly divided into 6 groups (group 1 to group 6)according to different transport time and rest time before slaughter, and then blood biochemical indicators and meat quality were detected. The results showed that the triiodothyronine (T3)and tetraiodothyronine (T4)levels of group 2 and group 3 were significantly lower than those of group 1 (P〈0.01). The alanine aminotransferase (ALT), aspartate transaminase (AST), creatine kinase (CK) and glutathione peroxidase (GSH-Px)levels of group 6 were significantly lower than those of group 3 and group 5 (P〈 0.01). The protein and malondialdehyde (MDA)contents of breast muscle in group 3 and group 5 were significantly higher than those of group 1 and group 6 (P〈0.01). The fat content and than those of group I (P〈0.01). The protein earbonyl content of group those of group 1 and group 6 (P〈0.01). It's suggested that long-lime ducks, while rest before slaughter could relieve adverse effects, and the pH value of group 2 were significantly higher 2 and group 3 were significantly higher than transport would cause serious stress in meat suitable rest time was two hours.
