摘 要:针对市场上香梨质地良莠不齐的现状,为实现香梨质地的综合评价,对不同贮藏期香梨进行了质地多面分析,并对测量所得的香梨质地参数进行主成分分析和聚类分析。结果表明:果肉破裂力、硬度、弹性、黏聚性、咀嚼性、回复性、附着性7项质地参数间具有显著相关性(P<0.05),对质地表达具有重复性,可提取3个主成分解释原质地87.39%信息;聚类分析将香梨质地参数分为3个群集时,第1主成分代表群集2的咀嚼性,第2主成分代表群集1的破裂力、硬度,第3主成分代表群集3的附着性、弹性、黏聚性、回复性;通过对3个主成分加权求和计算可得到综合评价香梨质地的指数,该质地指数随贮藏时间呈明显下降趋势,可为香梨质地分级检测提供策略。Texture profile analysis(TPA) was conducted for pears at different storage period.Then, principal component analysis and cluster analysis method were combined to comprehensively evaluate texture of Korla pear. The results showed that the 7texture parameters had a decreasing tendency significantly with the storage time excepted adhesiveness and there had significant correlations(P0.05) among 7 texture parameters of fracturability,hardness, springiness, cohesiveness, chewiness, resilience and adhesiveness, indicating that 7 parameters expressed repetitively about pear texture. Three principal components were extracted to explain texture of Korla pear, which could reflect 87.39% of the information of original variables. When the TPA parameters were divided into 3 cluster by cluster analysis, the first principal component was related to Cluster 2, representing chewiness. The second principal component was related to Cluster 1, representing fracturability and hardness. The third principal component was related to Cluster 3, representing adhesiveness, springiness, cohesiveness and resilience. The comprehensive evaluation texture index of Korla pear was calculated with the weighted sum of three principal components, which showed a decreasing tendency significantly with the storage time. It can provide the basis for the destructive grading of Korla pear texture.
