鲜蚯蚓添饲对鲤鱼肉质的影响

摘　　要：在饲喂配合饲料的基础上,按鱼体重的0.5%、1.0%、1.5%、2.0%添饲新鲜蚯蚓,研究其对清水江杂交鲤F1代肌肉品质的影响。研究发现:添饲新鲜蚯蚓能显著增加鱼体肌肉粗脂肪含量,增加量随蚯蚓添饲量增加而增加;对肌肉中主要脂肪酸的含量、酸鲜味氨基酸含量影响不大;添饲鱼体重1.0%和1.5%蚯蚓组的必需氨基酸总量比对照组增加11.67%和7.3%。结论:添饲新鲜蚯蚓能增加清水江杂交鲤F1代的肌肉滑嫩,但不能增加肌肉鲜味。On the condition of feeding the fish（ Qingshui River Carp Hybrid F1 generation） with compound feed,we added certain amount（ 0.5%,1.0%,1.5%,2.0% of the weight of the fish） of fresh earthworm to its feed so as to observe the river＇s influence on the quality of the muscle of the fish.The study found that adding fresh earthworm could significantly increase the muscle crude fat content,which increased with the increase of the feeding of earthworm; but it had very little influence on the content of main fatty acids and acid taste amino acid in the muscle; compared with the control group,the content of necessary amino acid in experimental group（ the amount of the earthworm is 1.0% and 1.5% of its weight） increased by 11.67% and 7.3% respectively. We made the conclusion that feeding fresh earthworm can increase the tenderness of the fish muscle,but it can＇t increase its freshness.
