摘 要:为探索"张杂谷"谷草替代育肥羊饲料中部分玉米秸秆对其肉品质的影响,试验选择体重相近、日龄为50d的健康小尾寒羊120只,随机分为4组,分别为对照组(基础精饲料,粗饲料为玉米秸秆)、试验Ⅰ组(基础精饲料,20%谷草+80%玉米秸秆)、试验Ⅱ组(基础精饲料,30%谷草+70%玉米秸秆)和试验Ⅲ组(基础精饲料,40%谷草+60%玉米秸秆)。每组3个重复,每个重复10只羊,试验期为120 d。试验期结束后,测定羊肉品质指标。结果显示:对照组与试验组Ⅰ、Ⅱ、Ⅲ在羊肉质量安全方面均为合格。与对照组相比,试验Ⅰ组的失水率和蒸煮损失均有所降低,但差异不显著(P>0.05),试验Ⅱ组和Ⅲ组较对照组显著降低(P<0.05),在失水率方面,Ⅱ组和Ⅲ组均降低8.33%,在蒸煮损失方面,分别降低9.52%和14.29%。。试验组育肥羊肉质中蛋白质总量、雌黄嘌呤、谷胱甘肽以及硒含量有一定的增加,但差异均不显著(P>0.05)。另外,肉质中脂肪、羰基化合物以及胆固醇的含量有所降低,差异也均不显著(P>0.05)。试验组肉质在色泽、脂肪含量、组织状态、外表以及气味等感官评价方面较对照组均有一定程度的改善。综上,"张杂谷"谷草替代育肥羊饲料中部分玉米秸秆可有效改善羊肉品质。The aim of this study was to explore the effect of Zhangzagu asparagus instead of some corn stalks on meat quality in fattening sheep.A total of 120 healthy Small Tailed Han Sheep with similar weight and age were randomly divided into 4 groups,including control group(basic concentrate feed,coarse feed was corn stalks),test group Ⅰ(basal concentrate;20% asparagus + 80% corn stalks),test group Ⅱ(basal concentrate;30% asparagus + 70% corn stalks) and test group Ⅲ(basal concentrate;40% asparagus + 60% corn stalks),each group with 3 replicates and 10 sheeps each.The test period was 120 days.At the end of the test period,meat quality was determined.The results showed that the quality safety(QS) of mutton were all qualified in the control group and the test groupⅠ,Ⅱ and Ⅲ.Compared with the control group,the water loss and cooking loss were decreased in groupⅠ,but had no significant difference(P〉0.05),group ⅡandⅢ were significantly lower than the control group(P〈0.05).In terms of water loss,group Ⅱand Ⅲ were both reduced by8.33%,and the cooking loss were reduced by 9.52% and 14.29% respectively.The contents of total protein,orpiment purine,glutathione and selenium in three groups were increased,but had no significant difference(P〈0.05).In addition,the contents of fat,carbonyl compounds and cholesterol of meat in three groups were decreased,the difference was not significant too(P〈0.05).The sensory evaluation of color,fat content,tissue status,appearance and odor were improved in the test groups compared with the control group.In condusion that Zhangzagu asparagus instead of some corn stalks of fattening sheep could improve the quality of mutton.
