摘 要:龙江菜是体现黑龙江地方特色风味的菜系,是黑龙江省旅游餐饮的重要组成部分。通过运用IPA分析法对龙江菜进行游客满意度调查,选取22个变量因子,采取对游客发放调查问卷的方式,统计游客对龙江菜各项指标的满意度和重要性。在区分优势区、维持区、修补区和弱势区的基础上,针对龙江菜存在的现有问题,按象限分布提出了优势区继续提升、维持区适度调控、修补区积极拓展、弱势区重点改进的对策建议。龙江菜在未来的发展进程中只有不断提高游客满意度,消除不利因素,才能进一步推动黑龙江省餐饮业的健康发展。Longjiang cuisine, a cooking style with Heilongjiang local characteristics, is an important part of tourism in Heilongjiang province. Through the use of IPA analysis, tourist satisfaction degree for the cuisine is surveyed by selecting 22 variable factors, issuing a questionnaire to the tourists, and investigating tourists' satisfaction and importance degree on the indicators of Longjiang cuisine. On the basis of distinguishing the advantages area, the maintenance area, the repair area and the vulnerable area, suggestions for the improvement of Longjiang cuisine are put forward according to the quadrant distribution. The advantage area should keep on promotion. The mainte- nance area should be moderately regulated. The repair area should actively expand. And the vulnerable area should focus on improvement. To continue to improve customer satisfaction and eliminate unfavorable factors, Longjiang cuisine could play a part in promoting the healthy development of the catering industry in Heilongiiang province.
