摘 要:为了掌握蒙山黑土猪的性能指标及肉质营养水平,对其繁殖性能、生长性能、屠宰性能和肌肉营养成分进行测定,结果为母猪平均产仔数11.2头,舍养期和放养期粗饲的料重比分别为5.43和5.58,瘦肉率51.34%,脂肪率29.27%,皮率9.21%,骨率10.18%,表明黑土猪具有杂交优势,耐粗性强,瘦肉率处于适中水平,与脂肪、皮、骨搭配合理。黑土猪背最长肌水分和脂肪含量分别为74.6 g和1.77 g,丰富的水分和脂肪是构成其肉质鲜嫩、多汁和风味清香的重要物质基础。钙、镁、锌含量分别为3.53 mg、23.88 mg和19.2 mg,比参照的普通猪肉分别高出25.62%、13.12%和115.73%,硒的含量0.164 mg/kg达到富硒标准,说明无饲料添加剂的黑土猪肉属于高锌和富硒猪肉;肌肉含有17种氨基酸,必需氨基酸和鲜味氨基酸占氨基酸总量的39.09%和77.23%,氨基酸营养比较均衡,蓄积重要氨基酸的能力较强。In order to control the performance index and meat quality of Mengshan black pig,the reproductive performance,growth performance,slaughter performance and muscle nutrition were measured.The average litter size of sows was 11.2,the ratio of material to weight during henhouse-feeding and grazing periods was 5.43 and 5.58,respectively,the lean rate was 51.34%,the fat rate was 29.27%,the skin rate was 9.21% and the bone rate was 10.18%.The results showed that the black pig had the advantages of hybridization,strong resistance to coarse,lean meat percentage was moderate,reasonable with fat,skin and bone.The water and fat content of the longissimus dorsi of the black pig were 74.6 g and 1.77 g respectively.The rich water and fat were the important material basis of the fresh,juicy and fragrant fragrance.Calcium,magnesium and zinc contents were 3.53 mg,23.88 mg and 19.2 mg,respectively,which were 25.62%,13.12% and 115.73% higher than the reference pork,respectively,the selenium content was 0.164 mg/kg to meet the reach selenium standard,indicating that the black pig without feed additive was high zinc and selenium-rich pork.Muscle contained 17 kinds of amino acids,essential amino acids and flavor amino acids accounted for 39.09% and 77.23% of the total amino acids,amino acid nutrition was balanced,strong ability to accumulate important amino acids.
