摘  要:为掌握海南文昌鸡热带气候环境饲养条件下的肉品特性,分别选取30只120日龄文昌鸡和42日龄艾拔益加鸡(AA鸡)进行腿部和胸部肌肉的肉品特性(硬度、弹性、粘结性、黏性和咀嚼性)和脂肪酸分布检测并分析。结果表明,海南文昌鸡胸部和腿部生肉和熟肉的硬度、粘结性、黏性和咀嚼性均显著高于AA鸡(p<0.05);文昌鸡胸部和腿部肌肉的脂肪酸C16:0和C20:4分布均显著高于AA肉鸡(p<0.05),但C18:0、C18:1、C18:2的分布无显著差异。与AA鸡比较,文昌鸡具有优良的肉品理化特性和多价不饱和脂肪酸含量,证实了文昌鸡作为海南名菜之首的独到之处。Abstract In order to grasp the meat quality of Hainan Wenchang chicken in the tropical climatic environment, Respectively, 30 Wenchang chicken (120-day-old) and AA chicken (42-day-old) were selected and The Hardness, elasticity, adhesion, stickiness and chewiness of the leg and chest muscles and the distribution of fatty acids were analyzed and analyzed. The results showed that the hardness, cohesiveness, viscosity and chewiness of the flesh and cooked meat in the chest and leg of Hainan Wenchang were significantly higher than those of the AA chicken (p〈0.05). The distribution of C16:0 and C20:4 in chest and leg muscles of Wenchang chickens was significantly higher than that of AA chicken (p〈0.05), but there was no significant difference between C18:0, C18:1 and C18: 2. Compared with AA chicken, Wenchang chicken has excellent physical and chemical properties of meat and polyvalent unsaturated fatty acid content. Our results contribute to prove that Wenchang chicken is excellent breed as native chicken. Key words Wenchang chicken ; meat quality ; fatty acid
