摘　　要：贝类是广受欢迎的水产品,但贝类中的生物毒素常引起食品安全事故,严重威胁消费者健康,影响了海洋养殖业的可持续发展。本文阐述了常见贝类毒素的种类如记忆缺失性贝毒、麻痹性贝毒、腹泻性贝毒、神经性贝毒、原多甲藻酸贝毒和环亚胺类贝毒,进一步综述了其毒素来源及分布区域,并简单介绍了贝类毒素的两种分析检测方法,最后介绍了发达国家和组织对贝类毒素的监控限量,以期为我国贝毒的监测和标准设定提供参考。Shellfish is a very popular aquatic product in Chinese market,but the biotoxins in shellfish have caused many food safety accidents,severely threatening consumers ＇ health and hindering the sustainable development of mariculture. The paper introduced the typical types of shellfish biotoxins such as ASP,PSP,DSP,NSP,AZA and CI biotoxins,then reviewed the origins of shellfish biotoxins and their distribution areas,further presented the two basic methods for analysis and determination of shellfish biotoxins,finally gave a description of the monitoring limit standards for shellfish biotoxins in some developed countries and regions,hoping to provide some references for the monitoring and regulation of shellfish biotoxins in China.
