摘　　要：本文介绍了几种可应用于难溶性甲壳素的乙酰度的测定方法,它们分别是元素分析法、一阶导数紫外光谱法、红外光谱法以及核磁共振波谱法。主要讨论了各种方法的测定原理,应用特点和优缺点。Several methods for the determination of degree of acetylation of chitin were introduced in this paper. These methods are elemental analysis, first derivative ultraviolet spectrophotometry, infrared spectroscopy and nuclear magnetic resonance spectroscopy. The measurement principles, characteristics in application and advantages and disadvantages of various methods were discussed.
