摘  要:以淮麦25为材料,研究在小麦拔节期和开花期喷施植物生长调节剂(PGRs)对籽粒蛋白质含量、淀粉及其组分含量以及面粉加工品质的影响。结果表明:1)劲丰、乙烯利和GA3两时期处理均显著增加了籽粒蛋白质含量;2)劲丰和乙烯利两时期处理显著增加了籽粒中直、支链淀粉和总淀粉含量,籽粒面粉的湿面筋和干面筋含量,提高了面筋指数,增加了沉降值和降落值,而GA3处理则相反;3)劲丰、乙烯利和GA3两时期处理对面粉的糊化特性也有显著影响。Huaimai 25 was adopted to explore the influences of PGRs applied at jointing and flowering stage on protein content, starch and its components content, as well as the flour processing quality in wheat. The result showed that JF, Eth and GAa treatment significantly increased protein content in grain at both jointing and flowering stage in wheat. Meanwhile, JF and Eth significantly enhanced the content of total starch, amylose and amylopectin as well as wet glu- ten and dry gluten, promoted gluten index, and increased the SDS-sedimentation volume and falling number in wheat grain at both stages, while GAa presented an opposite effect. Furthermore, JF, Eth and GAa had significantly effects on the pasting properties of wheat flour.
