摘  要:目的了解濮阳市餐饮具集中消毒单位现状和集中消毒餐具卫生状况。方法从全市17家餐饮具集中消毒单位抽取170件餐饮具进行检测,按照《食(饮)具消毒卫生标准》(GB 14934-1994)进行评价。结果 17家餐饮具集中消毒单位在生产布局、人员管理、卫生制度、洗涤剂消毒剂使用、消毒餐饮具运输、标识内容等方面均不完全符合要求,仅有1家单位建立了检验室,部分单位未区分污染车间和清洁车间,餐饮具消毒合格率为74%。结论餐饮具集中消毒单位准入门槛低,法律法规不健全,部门沟通协调不畅。期待修订相关法律法规,加强部门监管与沟通,确保广大消费者用上合格放心的餐饮具。Objective Understand the present situation and the concentration and disinfection of tableware hygiene in the food and beverage facilities in Puyang City. Methods From 17 food and beverage centers in the city,170 food and beverage equipment were tested. According to the standards of sterilization( GB 14934-1994). Results 17 tableware concentrated disinfection units in production layout,personnel management,health system,detergent,disinfectant use and disinfection tableware shipping mark content,etc,not completely conform to the requirements,only one unit established the inspection room,some units did not distinguish between the contaminated workshop and the cleaning workshop,and the disinfection rate of food and beverage was 74%. Conclusion There are low barriers to entry for food and food,poor legal regulations and poor communication. We look forward to revising relevant laws and regulations,strengthening the supervision and communication of the departments,and ensuring that the people will be able to ensure the use of food and food supplies.
