摘 要:天然黑色素兼具着色剂和抗氧化剂的双重作用。研究对文冠果种皮黑色素作为着色剂的稳定性和抗氧化活性进行评价。结果表明,该黑色素在pH<4时发生部分沉淀,其溶液的颜色随着pH值的增大而逐渐加深。加热和光照对该黑色素具有增色效应。氧化剂可使其褪色,而还原剂和蔗糖对其无明显影响。该色素对Al^(3+)、Ca^(2+)、Fe^(2+)、Fe^(3+)、Cu^(2+)和Zn^(2+)不稳定而对Na^+和Mg^(2+)稳定。文冠果种皮黑色素具有较强的抗氧化能力,其对·OH的清除率与2,6-二叔丁基对甲酚(BHT)相当,高浓度下清除二苯代苦味酰基自由基能力强于BHT,还原能力高于BHT,但总抗氧化能力不及BHT。文冠果种皮黑色素是一种具有抗氧化功能的着色剂资源,可进一步开发利用。Natural melanin plays dual roles as colorants and antioxidants. In this study,the colorant stability and antioxidant activities of the melanin from testae of Xanthoceras sorbifolia were evaluated. The melanin was partially precipitated below pH 4, and its solution color turned darker gradually with the increase of pH value. Heat and light caused hyperchromic effects, while oxidants demonstrated decoloration effects. The reductant and sucrose had no obvious effect on it. The pigment was stable to Na+ and Mg2+ while unstable to AP+ ,Ca2+ ,Fe2+ ,Fe3+ ,Cu2+ and Zn2+. The melanin showed strong antioxidant capacity. Its · OH scavenging ability approximated to that of butylated hydroxytoluene (BHT). It showed a stronger free-rad- ical scavenging ability towards 2,2-diphenyl-l-picrylhydrazyl than BHT did at a high concentration. Its re- ducing power was higher than that of BHT,while it was inferior to BHT in the total antioxidant capacity. The melanin is a colorant resource with antioxidant activities which can be further developed and utilized.
