摘 要:为探讨捕后干露处置对菲律宾蛤仔Ruditapes philippinarum复水湿藏稳定性的影响,将采捕后体质量为(12.0±1.6)g的菲律宾蛤仔分别进行冷却干露预处理(干露-4℃组)、室温干露预处理(干露-室温组)及无预处理(对照组)后进行海水湿藏,跟踪监测了湿藏期间菲律宾蛤仔生化代谢情况,指标包括各部位质量百分比、体腔液pH、肌肉pH、水溶性蛋白质、肌肉糖原、ATP关联物、AEC值和K值。结果表明:干露预处理会消耗肌肉中ATP,但这种消耗在湿藏期间(50 h)能得到部分恢复;复水湿藏过程中3个处理组的内脏团质量略呈下降,质量百分比由5.8%降至1.2%,其他软体部位质量保持稳定;水溶性蛋白质含量基本无变化;对照组糖原含量比干露组下降更明显,由43.6 mg/g显著降至25.6 mg/g(P<0.05);pH均随贮藏时间推移呈现降低趋势,其中肌肉pH由7.0显著降为6.7(P<0.05),体腔液pH由7.7降为7.3(P>0.05);各组菲律宾蛤仔的AEC值一直保持在71%~76%,K值保持在2%~6%。研究表明,50 h复水湿藏过程中,3个试验组均能保持较好的生理状态,短时间(24 h)的干露放置不会对菲律宾蛤仔复水湿藏稳定性产生影响。Manila clam Ruditapes philippinarum with body weight of( 12.0±1.6) g and shell length of( 3.0±0.35)cm were air exposed for 5 hours and stored in a refrigerator at 4 ℃( group D-4 ℃) and at room temperature( group D-R) for 24 hours,and the air exposed for 5 hour clam were put directly into the aerated sea water as control group. The biochemical and metabolic parameters were analyzed in the clams in group D-4 ℃,group D-R and control group,including mass percentage of various parts of the clam,pH values of muscular and body cavity fluid,contents of water-soluble protein,muscular glycogen,ATP,AEC value and K value. The results showed that ATP was consumed in the clam during air exposure,and then the consumption was partially restored during wet storage( 50 h). The mass of viscera were decreased slightly from 5.8% to 1.2%,and the mass of other soft tissues was kept stable during wet storage,almost unchanged in the water-soluble protein content. There was significant decrease in content of glycogen in the control group than that in the dry storage group,from 43. 6 mg/g to 25. 6 mg/g( P〈0.05),with decrease in pH with the storage time in the storage( 50 h). The muscular pH was found to be decreased from 7.0 to 6.7( P〈0.05),and the pH value in the body cavity to be decreased from 7.7 to 7.3. The AEC values was kept from 71% to 76%,and the K value from 2% to 6% in the clam in the three groups. The good state of Manila clam during live wet storage( 50 h) in this study indicates that short-term( 24 h) air exposure will not affect the biochemical metabolism of Manila clam during live wet storage.
