摘 要:为了更好地了解和评价市售蔬菜中Cu、Zn和Sb含量及其健康风险,在长沙某大型超市购买了30种蔬菜,对其进行重金属含量分析及其健康风险评价。结果表明:该大型超市销售的蔬菜中Cu、Zn和Sb的平均含量分别为8.74、61.12和5.85 mg/kg。不同种类蔬菜Cu、Zn和Sb含量不同,一般是叶菜类>果菜类>根茎类;同种蔬菜不同部位重金属含量的顺序也不同,一般为根>叶>茎。危险指数HI为0.1,表明当地居民食用市场购买的蔬菜所引起的健康风险甚微,不会对暴露人群造成伤害。In order to better understand and evaluate the content of Cu, Zn and Sb and their health risks in the marketed vegetables, 30 kinds of vegetables were purchased in a large supermarket in Changsha, and the contents of heavy metals and their health risk were evaluated. The results showed that the average contents of Cu, Zn and Sb in vegetables sold in the supermarkets were 8.74, 61.12 and 5.85 mg/kg respectively. The contents of Cu, Zn and Sb in different kinds of vegetables are different, generally speaking, leaf vegetables 〉 fruits and vegetables 〉 rhizomes; and the order of heavy metals in different parts of the same vegetables is also different, usually the root 〉 leaf 〉 stem. The hazard index HI is 0.1, indicating that the local residents' health risks caused by the vegetables purchased from the market are very small and do not cause harm to the exposed population.
