摘 要:小麦淀粉是小麦的主要成分,小麦在生长过程中会受到铅等重金属的污染。因此小麦在加工成小麦淀粉后不可避免地残留铅等有害重金属。铅是一种高度有毒物质,铅中毒具有非特异性的特点,因此不容易引起人们的重视,但对人体健康的危害性非常大。检测监控小麦淀粉中的铅的含量,有利于对加工食品的质量控制。本文建立了小麦淀粉中铅元素的微波消解-火焰原子吸收测定的方法。利用微波消解处理小麦淀粉样品,使用火焰原子吸收光谱法测定小麦淀粉中铅的含量。结果显示,小麦淀粉中铅元素未检出。本方法检出限为0.10μg·g-1,精密度试验RSD为1.1%,加标回收率为100.40%。与国标检测方法相比,该方法检测操作简单、速度快、精密度高,可用于小麦淀粉中铅元素的测定。Wheat starch is the main component of wheat, which is polluted by heavy metals such as lead during its growth. Thus, there will be unavoidable residue of harmful heavy metals such as lead. Lead poisoning has non- specific characteristics as a kind of highly toxic substance, so it is not easy to attract people' s attention, but it is very harmful to human health.The detection and monitoring of lead content in wheat starch is beneficial to the quality control of processed food. In this study, the method for the determination of lead in wheat starch by microwave digestion- flame atomic absorption was developed.Wheat starch was treated by microwave digestion , the content of lead in wheat starch was determined by flame atomic absorption spectrometry.The results showed that lead in wheat starch was not detected. The method of MDL was 0.10μg·g-1, RSD was 1.1%, scaled recovery rate was 100.40%.The method was suitable for the determination of lead in wheat starch with simple, fast and high precision advantages, compared with the national standard detection method.
