摘 要:采集扬州市售小龙虾样品60批次,原产地主要在江苏省淮安市盱眙县和江苏省扬州市。对其中的有害元素铅、汞、砷、镉的含量进行检测分析。检测结果表明,汞、砷和镉含量均未超标,有2个样品的铅含量超标。利用@risk软件对小龙虾中的铅进行风险评估,结果表明,小龙虾中高剂量组铅95%的暴露值为0.007 3 mg/(kg·bw),占每周每人耐受量的29.20%,在日常食用小龙虾时的铅摄入量不会对人体健康构成威胁。A total of 60 Procambarus clarkii samples were collected. The samples were mainly from Xuyi County of Huaian and Yangzhou in Jiangsu Province. Detect and analyze the contents of lead, mercury, arsenic and cadmium in the sampling. The analysis result showed that the contents of mercury, arsenic and cadmium were not exceeded, and 2 samples exceed the standard of lead. The results of risk assessment of lead in crayfish using @risk software. 95% exposure to lead in high-dose Procambarus clarkii group was 0.007 3 mg/(kg·bw), and the exposure value of the lead was 29.20% of PTMI. The intake of lead from Procambarus clarkii in diet, did not jeopardize human health.
