摘  要:目的研究注射用苏子油氧化稳定性及筛选优良的抗氧化剂。方法以全氧化值为指标,考察温度、光照及氧气对注射用苏子油氧化稳定性影响,并研究抗氧化剂在注射用苏子油自动氧化及光氧化过程中抗氧化效果。结果随温度升高注射用苏子油氧化稳定性下降,低温适于其储藏;光照使注射用苏子油快速氧化,避光利于其保藏;空气组较充氮气组氧化剧烈。抗氧化实验发现,在注射用苏子油自氧化及光氧化中,抗氧化剂丁基羟基茴香醚(butylated hydroxyanisole,BHA)、2,6-二叔丁基-4-甲基苯酚(butylated hydroxytoluene,BHT)、没食子酸丙酯(propyl gallate,PG)、抗坏血酸棕榈酸酯(L-ascorbylpalmitate,AP)及维生素E(vitamin E,VE)均有抗氧化作用,其中复合抗氧剂VE+AP对注射用苏子油抗氧化效果最强,其在空气、避光、60℃条件下自氧化10 d过氧化值、甲氧苯胺值较不添加抗氧剂组分别降低约60.34%、38.39%,全氧化值降低59.32%;其在空气、室温(17~25)℃、(4 500±500)lx条件下光氧化10 d过氧化值、甲氧苯胺值较不添加抗氧剂组分别降低约59.64%、43.17%,全氧化值降低约51.37%,推测由于VE为优良的自由基清除剂,而AP有较强的氧结合能力,协同发挥抗氧化作用。结论注射用苏子油在低温、避光及充氮的条件下并添加质量分数0.2‰VE+0.05‰AP抗氧剂保存,其全氧化值处在较低水平,且气味色泽良好,达到最好的稳定性效果。Objective To investigate the oxidative stability of perilla seed oil for injection and screen the excellent antioxidants. Methods The effects of temperature,light and oxygen on the oxidation stability of perilla seed oil for injection were investigated by using the full oxidation value as the index. The antioxidant effect of antioxidants on the automatic oxidation and photooxidation of perilla seed oil for injection were also studied. Results With the increase of the ambient temperature,the full oxidation value of Perilla Seed oil for injection increased significantly,indicated that the lowtemperature is suitable for the storage; compared with the protect from light conditions,the light could cause the oil to oxidize rapidly,so the protect from light condition is good for the storage; the air group had more intense oxidation progress than the nitrogen group.The antioxidation experiments showed that butylatedhyd-roxyanisole( BHT),butylated hydroxy-anisole( BHA),propyl gallate( PG),L-ascorbylpalmitate( AP) and vitamin E( VE) all possess antioxidation capacity to the perilla seed oil for injection,while the compound antioxidants of VE + AP showed synergistically antioxidant effect. Compared with none antioxidants,the peroxide value and anisidine of the air,protect from light,60 ℃ automatic oxidation of the compound antioxidants decreased 60. 34%,38. 39% respectively,the full oxidation value decreased 59. 32%; the peroxide value and anisidine of the air,ambient temperature 17-25 ℃,( 4 500 ± 500) lx photooxidation decreased 59. 64%,43. 17% respectively,the full oxidation value decreased 51. 37%. It is speculated that VE and AP synergistically play an antioxidant effect owing to free radical scavenging activity of VE and the strong oxygen binding capacity of AP. Conclusions The perilla seed oil for injection,stored at conditions of lowtemperature,protect from light,full of nitrogen and added with antioxidants of mass fraction 0. 02% VE + 0. 005% AP,had a lower level of the full oxidatio
