摘  要:为了研究高压脉冲电场对鲜切苹果中大肠杆菌的杀菌效果。分别对接种大肠杆菌的鲜切苹果使用不同电场强度(5 k V/cm,17.5 k V/cm,30 k V/cm,37.5 k V/cm,45 k V/cm)和处理时间(1 min,3 min,5 min,10 min,15 min,20 min,25 min)进行处理。并使用修正Gompertz模型拟合在25℃条件下生长曲线,HülshegerⅠ和Ⅱ模型建立大肠杆菌与电场强度和处理时间的致死动力学模型。结果发现,修正Gompertz模型、HülshegerⅠ和Ⅱ模型拟合函数的决定系数均大于0.990 1,均方根误差均小于0.223 5,且具有统计学意义(p〈0.01);结果表明,所建立的模型拟合度良好,能够较好地反映PEF处理后大肠杆菌在鲜切苹果表面的生长;且随着高压脉冲电场的电场强度和处理时间的增加,大肠杆菌的残存率越低。本试验建立的模型能够作为高压脉冲电场不同条件处理对鲜切苹果中大肠杆菌杀菌效果的参考依据。In order to study the bactericidal effect of high intensity pulsed electric field on Escherichia coli in fresh cut apples, different electric field intensity (5 kV/cm, 17.5 kV/cm, 30 kV/cm, 37.5 kV/cm, 45 kV/cm) and treatment time (1 min, 3 rain, 5 min, 10 rain, 15 min, 20 min, 25 min) were used for fresh-cut apples inoculated with Escherichia coli respectively. And the modified Gompertz model was used to fit the growth curve at 25 ℃. Htilsheger I and II models were used to establish the lethal kinetic model of Escherichia coli with electric field strength or treatment time. It was found that the correction coefficients of the modified Gompertz model, Htilsheger I and ]I model were all greater than 0.990 1. The mean square errors were less than 0.223 5, and they had statistical significance (p〈0.01). The results showed that the established model had a fitting degree, and could well reflect the growth of Escherichia coli on the surface of fresh apples after PEF treatment. With the increase of the electric field intensity and treatment time, the residual rate of the Escherichia coli was lower. The established model in this study could be used as the reference for the bactericidal effect of Escherichia coli in freshly cut apples under different conditions of high intensity pulsed electric field.
