摘 要:利用超声光栅测量了葡萄糖、果糖和麦芽糖在不同浓度下的体积弹性模量.实验结果表明:糖类溶液体积弹性模量随浓度的增大单调递增,具有近似线性关系,相同质量分数,单糖溶液的体积弹性模量大于二糖溶液.其原因主要是二糖的分子质量大且其分子结构在水溶液内容易形成氢键,而对于同分异构的单糖溶液体积弹性模量之间的差异,则是因为其分子结构的不同.The bulk elastic modulus of glucose solutions,fructose solutions and maltose solutions at different concentrations were measured according to the principle of ultrasonic grating.The experimental results showed that the bulk elastic modulus of saccharide solutions increased almost linearly with the increase of concentration.The bulk elastic modulus of monosaccharide was larger than that of disaccharide at the same concentration.The main reason was that the disaccharide had the larger molecular weight and its molecules were easier to form hydrogen bonds in aqueous solution.And the differences in bulk modulus of elasticity between isomeric monosaccharide solutions were due to their different molecular structure.
