卤素水分测定仪法测定5种蔬菜水分含量

摘　　要：目的探讨烘箱法和卤素水分测定仪法检测蔬菜水分含量中的优势与劣势。方法选取生菜叶、茄子果肉、黄瓜果肉、辣椒和青辣椒5种蔬菜,分别用烘箱法和卤素水分测定仪法检测其水分含量,分析两种方法的准确性和可靠性。结果两种方法检测的五种蔬菜水分含量均达90%以上,其中黄瓜果肉的水分含量最高,可达96.49%。当样本数量较少时,使用卤素水分测定仪法可以较快得出结果;若样本量较大时,可使用烘箱法进行同步测定。两种方法经统计分析差异无显著性,即两种方法的精密度和准确度一致。结论在一定条件下,卤素水分测定仪法可以替代烘箱法,检测蔬菜的水分含量。Objective To analyze the advantages and disadvantages of the measuring the water contents in vegetables by the oven drying method and the halogen water-determination meter method. Methods The water contents of lettuce,eggplant and cucumber pulp,pepper and green pepper were detected by the halogen water-determination meter method and the oven drying method to compare the accuracy and precision of these two methods. Results The water contents of five kinds of vegetables detected by these two methods were all over 90%. The water content in cucumber pulp was the highest,up to 96. 49%. If the sample size is small,the results can be obtained quickly by using the halogen water-determination meter metohd. If the sample is larger,the oven drying method can be used for simultaneous determination. The results of two determination methods had no significant differences via the mathermatical statistics analysis. The accuracy and precision of halogen water-determination meter method for determination the water contents in vegetables are consistent with oven drying mehod. Conclusion Under certain conditions,the halogen water-determination meter method can replace the oven drying method to determine the water contents of vegetables.
