柠檬提取物在雪花膏中的抗氧化性能研究

摘  要:本文对柠檬提取物在不同用量、双氧水作用和紫外光照射条件下,对雪花膏过氧化值(POV)和羟基自由基清除能力进行测试,表明:添加4 m L柠檬提取物后,雪花膏溶液25℃下保温4 h,雪花膏的POV比未添加时小21.15%;用1 m L体积分数为1%的H2O2水溶液氧化,25℃下保温4 h,POV比未添加时少28.24%;用紫外光照射4 h,25℃下保温3 min,雪花膏的POV比未添加时少22.34%;羟基自由基清除率是不加时的2.04倍。本文加入的是纯天然无添加柠檬提取物,以期为天然抗氧剂的开发应用提供依据。The POV and hydroxyl radical scavenging ability of lemon extract in different dosage, hydrogen peroxideand UV irradiation conditions were studied. The results showed that after adding 4 mL lemon juice and keeping cold creamsolution heat for 4 h under 25 ℃, cold cream POV was lower 21. 15% than without adding. With 1 mL volume fraction of1% H2O2 solution oxidation and heat preservation under 25 ℃ for 4 h, POV was smaller 28. 24% than without adding.By ultraviolet light for 4 h and heat preservation under 25 ℃ for 3 min, cold cream POV was smaller 22. 34% thanwithout adding. The hydroxyl free radical scavenging capacity was 2. 04 times than without adding. The lemon extractadded into cold cream was natural without additive, in order to provide the theory basis for the development andapplication of natural antioxidants.
