摘 要:以太阳能干制花菜干和摊晒花菜干为原料进行复水试验,得到不同复水时间的复水率,为进一步明确最佳复水时间、辅助质构法和色差法综合得出了最佳复水时间。结果表明,太阳能干制花菜干在复水3 min时,摊晒干制花菜干在复水6 min时,复水率可达80%以上。为了更加明确最佳复水时间,进一步进行剪切力试验得出,太阳能干制花菜干复水8 min时剪切力最小,摊晒干制花菜干复水后9 min时剪切力最小,综合色差值测定得出,2个复水时间下色差值也较好。通过相关性发现花菜干在不同复水时间的复水率、色差L~*值、a~*值、b~*值、剪切力均存在显著的正负相关性。因此,质构法和色差法可辅助判定花菜干的最佳复水时间。The solar dried cauliflower and share the sun dried cauliflower as raw materials,complex water experiment to get the water recovery rate in different rehydration time, in order to further clarify the best rehydration time, combine auxiliary texture method and color difference method to get the optimal rehydration time. The results showed that the solar dried cauliflower rehydration of 3 min, unfold dry dried cauliflower rehydration 6 min, water recovery rate can reach more than80%. In order to determine the best rehydration time, further draw the shear force experiment, the solar dried cauliflower rehydration of 8 min minimum shear,unfold dried cauliflower after rehydration of 9 min shear minimum,comprehensive color difference measurements,were good under these two rehydration time. The correlation showed that under different rehydration time in dried cauliflower water recovery rate, L~*, a~*, b~* color value and shear stress had positive, negative correlation significantly. So the best rehydration time of texture and color difference method can assist the determination method of dried cauliflower.
