摘  要:红枣作为我国的特产,被人们称赞为"天然的维生素丸",属于药食同源食物。红枣枣皮红色素是天然色素,因其安全无毒副作用而成为国内科研人员的研究热点。本文以新疆和田红枣为原料,采用超声辅助碱提取法提取枣皮红色素,以0.2mol/L为提取剂,采用单因素试验确定提取最佳工艺。最佳工艺为:料液比为1:20,粒度40目,提取功率为最大功率950W的60%(570W),提取时间为60min,提取温度为60℃。本文较为系统的研究了红枣枣皮红色素的提取工艺,以期为红枣红色素的合理开发利用提供理论依据和参考。Jujube, as a specialty of China, has been praised as a " natural vitamin pill " and belongs to the homologous food of medicine and food. Jujube red pigment is a natural pigment, which has become a research hotspot for domestic researchers because of its safety, non-toxic side effects. In this paper, Xinjiang Hetian jujube was used as raw material to extract jujube red pigment by ultrasonic assisted alkali extraction method, and 0. 2 mol/L was used as extractant. The best extraction process was determined by single factor experiment. The optimum process is as follows :the ratio of material to liquid is 1 : 20, the particle size is 40 mesh, the extraction power is 60 %( 570 W) of the maximum power of 950 W, the extraction time is 60 min, and the extraction temperature is 60 ° C. This paper systematically studied the extraction process of jujube red pigment from jujube, in order to provide theoretical basis and reference for the rational development and utilization of red jujube red pigment.
