摘 要:活性抗菌包装是未来食品防腐包装工业的发展方向,具有巨大的市场潜力。文中从抗菌剂分类的角度介绍了活性抗菌包装的类别,通过比较具有抗菌活性、具有释放行为以及具有控制释放行为的抗菌包装发展的不同阶段所存在的优势及不足,综述了活性抗菌包装国内外的研究现状与进展,阐述了释放规律模型及动态平衡机理,展望了控释抗菌包装今后的发展趋势。The active antimicrobial packaging is a developing direction of food preservative packaging industry,and there is great market potential.The classification of active antimicrobial packaging was introduced from perspective of antibacterial agent in this paper.On the basis of comparing advantages and disadvantages including antimicrobial packaging of antibacterial activity only,release behavior and controlled release respectively,current situation and progress of the active antimicrobial packaging were analysed synthetically at home and abroad.Model of controlling the release of antimicrobial activity and dynamic equilibrium mechanism was established,in addition,the prospect of controlled-release antimicrobial packaging could be known in the future.
