摘  要:钙蛋白酶(Calpain,CAPN)是广泛存在于细胞中特异性依赖Ca2+激活的一种中性半胱氨酸巯基内肽酶。在脊椎动物中,研究最多的钙蛋白酶是μ-calpain和m-calpain。钙蛋白酶基因已被作为影响肌肉嫩度的候选基因,应用在动物育种以及动物屠宰后肉产品嫩度的鉴定和成熟嫩化等生产中。本文综述了钙蛋白酶的结构、功能、活性调节及其基因与肉质相关性的研究状况。以期为今后开展更多、更深入的科学研究提供参考。Calpain is a neutral cysteine-based endopeptidase that is widely dependent on Ca^2+ activation in cells.Among vertebrates,the most studied isμ-calpain and m-calpain.Calpains gene has been used as candidate genes affecting meat tenderness,usually applied to animal breeding,identification and maturity of tenderness of meat products after slaughter,etc.In this paper,the structure,function,activity regulation of calpain,the structure of gene and its correlation with meat quality were reviewed,hoping to provide reference with further scientific research.
