摘　　要：畜禽血液作为畜禽屠宰加工的主要副产物,含有很高的营养价值,其富含蛋白质、多种必须氨基酸和生物活性物质,因此具有好的应用前景。本文主要介绍了畜禽血液的资源概况,探讨了国内外畜禽血液的研究现状,并对畜禽血液的利用前景进行了分析,以期为更好地利用畜禽血液提供参考。As the main by-product of livestock and poultry slaughter processing,livestock and poultry blood is rich in nutrition.It has a good application prospect because of its abundant protein,a variety of essential amino acids and bioactivator.This paper introduces the resource situation of livestock and poultry blood,explores the current research state of at domestic and foreign livestock and poultry blood,and then makes an analysis about the utilization prospect of livestock and poultry blood,expecting to provide reference for making better use of livestock and poultry blood.
