摘 要:目的了解秦皇岛市售干制水产品中铅、镉、汞、砷污染状况,评估其食用安全风险。方法采集该市销售量较大的鱼类、软体类、甲壳类、棘皮类和藻类共5类70份干制水产品,利用电感耦合等离子体质谱法检测其铅、镉、总汞、总砷含量,依据国家食品卫生标准,采用食品安全指数评价方法进行风险评估。结果干制水产品中铅、镉、总汞、总砷的平均含量分别为0.57、1.06、0.07、8.92 mg/kg;食品安全指数均值为6.02,其中鱼类、软体类、甲壳类、棘皮类和藻类分别为5.49、6.79、9.41、3.89、2.27。铅、镉、总汞、总砷的食品安全指数均值分别为0.39、0.41、0.09、5.15。结论秦皇岛市售部分干制水产品样品存在超标情况,其余可安全食用。不同种类的干制水产品中所测4种元素含量相差很大。干制水产品中甲壳类的风险最大,尤其是砷的风险应引起足够的重视。Objective To investigate the pollution status of lead, cadmium, mercury and arsenic in dried aquatic products from Qinhuangdao city, and to assess their risks associated with food safety. Methods 70 dried aquatic products (fish, mollusks, crustaceans, echinoderms and algae) from Qinhuangdao city were collected. The contents of Pb, Cd, Hg, and As in dried aquatic products were detected using ICP-MS. According to the national standard for food hygiene, the risks associated with food safety of heavy metals were assessed using the food safety index evaluation method. Results The average contents of Pb, Cd, Hg, and As in dried aquatic products were 0.57 mg/kg, 1.06 mg/kg, 0.07 mg/kg and 8.92 mg/kg, respectively. The average food security index was 6.02, while the food security indexes of fish, mollusks, crustaceans, echinoderms and algae were 5.49, 6.79, 9.41, 3.89 and 2.27, respectively. The food security indexes of Pb, Cd, Hg, and As were 0.39, 0.41, 0.09 and 5.15, respectively. Conclusion There were a part of dried aquatic products exceeding the standard in Qinhuangdao city, while the rest was safe to eat. The content of Pb, Cd, Hg, and As in five kinds of dried aquatic products were very different. Crustaceans posted the highest risk of heavy metal contamination in dried aquatic products; especially, the risk of As should be given sufficient attention.
