摘 要:以徐蒜917为试材,研究不同颜色地膜覆盖对大蒜鳞茎品质的影响,并采用模糊评价隶属函数法评价鳞茎综合品质。结果表明:除白黑膜外,有色膜覆盖均提高了大蒜单头鳞茎重和一级大蒜比例;除红膜和白黑膜处理中大蒜素及黑膜处理中丙酮酸含量较低外,有色膜覆盖均显著诱导鳞茎大蒜素和丙酮酸含量的增加;黑膜覆盖有利于VC含量的增加,绿膜覆盖可提高可溶性糖含量,银膜和白黑膜覆盖则显著增加了纤维素含量;有色膜覆盖对可溶性蛋白含量的影响基本呈下降趋势,但可导致硝酸盐的积累。综合分析表明,除白黑膜显著次于透明膜外,有色膜覆盖有利于提高大蒜鳞茎综合品质,且绿膜覆盖大蒜鳞茎综合品质最优,银膜和黑膜次之。The effects of different color plastic flm mulching on the appearance quality and nutritional quality of garlic bulb were studied with a garlic (Allium sativum L.) cultivar ‘Xusuan 917’, and the comprehensive quality was evaluated by the membership function method of fuzzy analysis. The results showed that except the white black flm, the color flms mulching signifcantly increased the per bulb weight and the frst grade bulb ratio. Except that the allicin content of garlic covered by red or white black flm and the pyruvic acid content of garlic covered by black flm were lower, the color flms signifcantly induced the increase of allicin content and pyruvic acid content in garlic bulb. VC content of the black flm increased signifcantly, and the soluble sugar content of the green flm increased signifcantly. The silver flm and the white black flm signifcantly induced the increase of cellulose content. The color flms mulching mostly caused the decrease of soluble protein content, but led to the nitrate accumulation in garlic bulb. The results of comprehensive analysis showed that except the white black flm was signifcantly inferior to the transparent flm, the color flms mulching were benefcial to improve the comprehensive quality of garlic bulb, and the bulb comprehensive quality of garlic covered by the green flm was the best, followed by the silver flm and the black flm.
