摘  要:以Keggin型多金属氧酸盐Na_3PW_(12)O_(40)为效应物,研究其对山药多酚氧化酶的抑制作用,并研究了4种多金属氧酸盐H_4SiW_(12)O_(40)·xH_2O,H_3PW_(12)O_(40)·xH_2O,α-1,2,3-K_6H[SiW_9V_3O_(40)],α-K_5[SiW_(11)VO_(40)](以下分别简写为SiW_(12),PW_(12),SiW_9V_3,SiW_(11)V)对红毛丹果实贮藏保鲜的简单应用实验,结果表明,Na_3PW_(12)O_(40)对多酚氧化酶的半抑制率(IC_(50))为1.61 mmol/L,抑制类型为非竞争型,抑制常数K_I=K_(IS)=0.21 mmol/L.同时,相比于对照组,4种多金属氧酸盐对红毛丹果实保鲜效果均较好,其中保鲜效果最佳的为PW12.The inhibition effects of Keggin-type polyoxometalates(Na3PW(12)O(40))on activity of polyphenol oxidase(PPO)and the effects of polyoxometalates(H4SiW(12)O(40)·xH2O,H3PW(12)O(40)·xH2O,α-1,2,3-K6H[SiW9V3O(40)],α-K5[SiW(11)VO(40)](abreviated as Si W(12),PW(12),SiW9V3,SiW(11)V)on storage of Rambutan were studied. The results showed that the half inhibition rate(IC(50))of PPO by Na3PW(12)O(40) was 1.61 mmol/L,the inhibition type was non-competitive,and the inhibition constant was KI=K(IS)=0.21 mmol/L. At the same time,compared with the control group,four kinds of polyoxometalates had better effects on the fruit preservation of Rambutan,among which PW(12) was the best.
