彭水县五倍子中蜂蜂蜜品质分析

摘　　要：为了解彭水自治县五倍子中蜂蜂蜜的商品价值,对其理化指标及感官指标进行了综合评价。结果显示,彭水自治县五倍子中蜂蜂蜜符合国家蜂蜜行业标准GH/T 18796-2012蜂蜜一级品的要求,且果糖和葡萄糖含量、酸度、淀粉酶活性及羟甲基糠醛含量均显著优于标准指标(P<0.05)。研究认为,彭水自治县五倍子中蜂蜂蜜是一种优质的地方特色蜂产品,大力发展该产业能提高当地的社会效益和经济效益,增加蜂农收入,具有较好的发展前景。In order to determine the quality of Chinese gall ripe honey from Pengshui, we evaluated the physicochemicaland sensory indexes of ripe honey. The results showed that Chinese gall ripe honey from Pengshui were compliant with honey industry standard GH/T 18796-2012. Fructose and glucose content, acidity, amylase activity and 5-hydromethyl-2-furaldehyde content were better significantly than standard indexes （P〈0.05）. As a results, we suggested that Chinese gall ripe honey from Pengshui was a high-quality and local bee product. Devel- oping the ripe honey industry of Chinese gall in Pengshui not only increased the economic benefit for beekeepers, but also have good prospects for development.
