摘 要:甾醇是各类食物中重要的生理活性物质,也是真核生物细胞膜的重要组分,广泛参与机体的生命活动,被誉为生命的"钥匙"。植物甾醇是一类与动物甾醇结构类似而支链碳链不同的植物类固醇物质,因其对低密度脂蛋白胆固醇的吸收具有竞争性抑制作用,常被用于降低胆固醇的保健食品。近年来,随着研究的逐渐深入,植物甾醇的抗氧化、免疫调节及促生长等作用被陆续报道。文章综述了植物甾醇生物学功能及其在动物生产上的研究进展,旨在为提高动物生产性能、推动健康高效养殖模式提供参考依据。Sterols are important physiological aetive substances that formed in a variety of food. Also, they are the critical components of the eukaryotic cell membranes, widely participating in all the activi- ties of organism. Therefore, the sterols are consistently praised as the key of life. Phytosterols are a kind of plant steroid substances whose structure is similar to that of zoosterol, but their branched car- bon chains are different. Phytosterols are usually used as a healthy food to decrease circulating choles- terols, since it has an inhibitory effect on the absorption of low density lipoprotein eholesterin. With the deepening of the studies, a range of biological function of phytosterols has been reported succes- sively, including antioxidant capacity, immunoregulation, growth-promoting effect, and etc. This article mainly reviews the biological function of phytosterols and the research advance of their application in animal production, aiming at providing references for the improvement of animal productive performance as well as the promotion of healthy and efficient breeding model.
