摘  要:为了研究鸡的肌肉营养成分,试验以西北地区主要家禽品种(青爪乌鸡、珍珠鸡、贵妃鸡和大白鸡)公鸡为研究对象,测定了肌肉中水分、灰分、粗蛋白、粗脂肪等营养成分和脂肪酸组成。结果表明:不同品种鸡肌肉的基本营养成分含量除水分外不存在显著差异(P〉0.05),蛋白质含量较高,脂肪含量较低。肌肉中脂肪酸组成丰富,多不饱和脂肪酸占比较大,并富有人体必需的脂肪酸,如亚油酸、亚麻酸、花生四烯酸、二十碳五烯酸(EPA)和二十二碳六烯酸(DHA)。说明青爪乌鸡、珍珠鸡、贵妃鸡和大白鸡肌肉均具有高蛋白、低脂肪、富含人体必需脂肪酸的特点,符合人们对肉品的营养价值的需求。In order to study the nutrition components of chicken, the main species of poultry(Black chicken, Guinea fowl, Royal chicken, Big white cock) from the northwest area were collected as the target. And the nutritional of moisture, ash, crude protein, crude fat and fatty acid were determined. The results showed that there was no significant difference in the basic nutritional components of chicken muscles in different breeds(P0.05), except for moisture. These chickens had higher protein content while fat content was lower. The fatty acids in muscle were rich, polyunsaturated fatty acids of them occupied a large proportion, and also contained kinds of essential fatty acids(EFA), such as Linoleic acid, Linolenic acid, Arachidonic acid, EPA and DHA, except for moisture. The results indicated that the muscles of Black chicken, Guinea fowl, Royal chicken and Big white cock had high protein, low fat, and rich in EFA, conforming for the people's demand of nutritional value of meat products.
