摘　　要：聊城县为明清东昌府首县,由于地处运河之滨,漕艘云集,商业发达,称"江北一都会",南北文化在此汇集,从而为饮食业的发达提供了条件。清末黄河北徙,运河断流,聊城经济受到一定影响,但却为饮食文化的积淀、融合时期,不但种类繁多,丰富异常,而且适合不同阶层的人群,形成了诸多的老字号与知名品牌,成为了体现聊城浓厚运河文化底蕴与反映普通市民生活的重要标志。Liaocheng county is the first county in Dongchangfu during the Ming and Qing Dynasties. Because it is located on the shore of the canal, the business is well-developed, and it is called ＂Jiangbei capital city＂ . The culture of North and south is here, which provides conditions for the development of catering industry. At the end of the Qing Dynasty the Yellow River migration to the north, the canal stop, Liaocheng economy will be affected, but the fusion of diet culture accumulation, period, not only a wide range of rich anomalies, and suitable for different sectors of the population, and formed a lot of time-honored brands, has become an important symbol of Liaocheng reflects the strong canal culture and reflect the general public life the.
