摘 要:因黄瓜果实出现苦味对品质影响严重,备受关注。试验以白丝条、津优1号和以色列水果黄瓜3个品种为研究对象,设置5个氮肥处理,即N1(750 kg·hm-2),N2(1 050 kg·hm-2),N3(1 350 kg·hm-2),N4(1 650 kg·hm-2),N5(1 950 kg·hm-2),以不施氮肥为对照,分析各处理黄瓜不同生育期苦味以及商品瓜品质,探讨氮肥与黄瓜苦味出现的关系。结果表明,3个品种中仅白丝条在各生育期均有苦味,可作为黄瓜苦味变化规律研究的优选品种;随着氮肥施用量的增加,白丝条商品瓜的苦味评分呈先降低后升高的趋势,而Vc含量则呈先升高后下降的趋势,其中N2(1 050 kg·hm-2)处理苦味评分最低且Vc含量最高。Due to the serious etteet of bitter taste on the quality of cucumber fruit, it has attracted nmeh attention. The experiment was conducted with Baisitiao, Jinyou 1, and Israeli fruit cucumber, 5 nitrogen fertilizer treatments were set including N1 (750 kg. hm^-2), N2 (1 050 kg. hm^-2), N3(1 350 kg. hm^-2), N4(1 650 kg. hm^-2), and N5(1 950 kg. hm^-2), and no nitrogen fertilizer was as control, the bitter taste in ditterent growth periods, and the fruit quality of cucumber was analyzed to discuss the relationships between nitrogen fertilizer and fruit bitterness in cucumber. The resuhs showed that Baisitiao had bitterness in each growth period, thus, Baisitiao could be used as a preterred variety tor studying the change law of bitterness in cucumber. Following with the increase of nitrogen fertilizer, the bitter taste score of Baisitiao melon was decreased first and then increased, while the Ve content was increased first and then decreased, in which the N2(1 050 kg. hm^-2) treatment had the lowest bitter score but the highest Ve content.
