摘　　要：清洗是蔬菜加工过程的关键环节之一,对蔬菜的品质至关重要。综述了我国蔬菜清洗技术及设备研究的最新进展,分析比较了国内外蔬菜清洗设备的特点,并提出了此领域未来研究发展趋势。Cleaning is one of the key links in vegetables processing,which is vital for the quality of vegetables.In this paper,the latest research status of vegetables cleaning techniques and equipments in China were reviewed.The features of vegetables cleaning machines in China and other countries were compared.And the future development direction of vegetables cleaning was discussed.
