摘　　要：烤全羊是新疆历史悠久的传统风味肉制品,口味独特,营养丰富,深受大众喜爱。介绍了新疆烤全羊的现状,对比了不同类型烤全羊加工装置的特点,分析了不同装置存在的问题。提出要将环保、卫生、安全、节能放在首位,将烤全羊的烘烤工艺与设备的开发结合起来,并提高装置的自动化和智能化。这为研发适合新疆烤全羊加工需求的自动化设备提供有价值的参考依据。Roasted Whole Lamb is the traditional meat products in Xinjiang which has a long history,unique taste,rich nutrition,loved by the public.Introduces the current situation of Xinjiang Roasted Whole Lamb,comparing the characteristics of different types of Roasted Whole Lamb processing device,analyzes the existing problems of different devices.Put forward to environmental protection,health,safety and energy saving in the first place,the development of baking equipment will be Roasted Whole Lamb the combination,and improve the automation and intelligent device.The research and development for automation equipment in Xinjiang Roasted Whole Lamb process needs to provide a valuable reference.
