摘 要:目的以本地产原桃胶为原料制备商品桃胶,并测定其性质及单糖组成。方法以泰安本地产原桃胶为原料,采用碱水解法制备了商品桃胶,并对其单糖组成及理化性质进行了表征。结果本研究制备的商品桃胶具有良好的水溶性和稳定性。桃胶多糖主要由半乳糖、阿拉伯糖、鼠李糖、甘露糖、木糖和葡萄糖组成,其摩尔比为30.40∶50.70∶0.46∶2.38∶13.50∶2.56。结论本研究提供了一种制备商品桃胶的有效方法,并明确了产品的性质和单糖组成,为其实际应用提供了理论依据。Objective:To prepare commercial peach gum using the locally produced original peach gum.The properties and monosaccharide composition of the commercial peach gum were also determined.Methods:Commercial peach gum was produced by alkaline hydrolysis method,using the Tai'an native original peach gum as raw materials.Its monosaccharide composition and physicochemical properties were further characterized.Results:Commercial peach gum prepared by this study had good water solubility and stability.Peach gum polysaccharide was composed of galactose,Arabia sugar,rhamnose,mannose,xylose and glucose,with the molar ratio of30.40∶50.70∶0.46∶2.38∶13.50∶2.56.Conclusion:Monosaccharide composition ratio of peach gum has certain differences with that reported in the literature,which may be caused by the different origin and test methods.
