摘  要:[目的]探讨红大初烤烟叶的最佳陈化时间、温湿度和包装材料等陈化条件。[方法]以大理南涧红大烟叶为对象,研究不同陈化时间对红大烟叶品质和烟叶致香成分含量的影响,并研究不同陈化温度、湿度、包装材料对红大烟叶感官品质的影响。[结果]红大C3F烟叶在温度为20~30℃,空气相对湿度为60%~80%,并采用木箱进行包装避光时陈化效果最佳;各部位烤烟最佳陈化时间为上部30个月以上,中部18~30个月,下部约在18个月以内;β-胡萝卜素降解产物、挥发性醇类、直链脂肪酸及酯、半挥发性酮类、杂环、茄酮等致香成分在36个月的陈化过程中,含量呈逐年下降的趋势。[结论]该研究可为卷烟工业的加工利用提供科学参考。[Objective]The optimum aging time,temperature and humidity and packaging materials were discussed.[Method]The influence of different aging time on the quality and content of aroma components of Hongda C3F tobacco leaves in Nanjian of Dali City was studied,and the effects of different aging temperature,humidity and packaging materials on sensory quality of Hongda tobacco were studied.[Result]The Hongda tobacco leaves were the best aged under the temperature of20-30℃,the air relative humidity of60%-80%,and the use of wooden packaging dark aging.The optimum aging time of flue-cured tobacco in each part was above30months in the upper part,18-30months in the middle part,and18months in the lower part.In the36months of aging,the content ofβ-carotene degradation products,volatile alcohols,straight fatty acids and esters,semi-volatile ketones,heterocyclic compounds and solanone were decreasing year by year.[Conclusion]This study can provide scientific reference for the processing and utilization of cigarette industry.
