摘 要:以石榴花为原料,提取石榴花红色素。研究辅色剂及辅色条件对石榴花色素的辅色效果。实验表明:丁二酸,草酸,柠檬酸,对石榴花色素具有辅色作用,可大大增强石榴花色素的热稳定性,其中草酸增加程度最大,且丁二酸,草酸,柠檬酸的最佳辅色浓度为3%。而抗坏血酸对石榴花色素辅色效果不明显,硼酸和乳酸对石榴花色素有减色效果。选择草酸为辅色剂,针对影响石榴花色素稳定性突出的pH值及温度,用正交试验法进行条件优化。确定了草酸辅色最佳条件是,草酸浓度为4%、温度30℃、pH=1,相关性分析表明,pH值是影响草酸辅色的主要因素,其次是温度,浓度的影响最小。the pomegranate flower as raw material,extraction of pomegranate red pigment.The auxiliary reagent and auxiliary color conditions of pomegranate flower pigment complementary color effect.The experiment showed that succinic acid,oxalic acid,citric acid,the pomegranate flower pigments have complementary color effect,can greatly enhance the thermal stability of the pomegranate flower pigment,increase most of oxalic acid,and succinic acid,oxalic acid,citric acid in the best complementary color concentration was 3%.But ascorbic acid in pomegranate flower color pigment and auxiliary effect is not obvious,boric acid and lactic acid in pomegranate flower color known as subtractive effects.In the paper,the pH value and temperature of the stability of pomegranate flower pigment were selected and the conditions were optimized by orthogonal test.Determines the optimum condition is that the complementary color oxalate and oxalic acid concentration of 4%,temperature 30℃,pH=1,the correlation analysis showed that the pH value is the main factor affecting oxalate complementary color,followed by temperature,concentration of minimal impact.
